Our 2011 Sonoma County Cabernet is dark garnet in color with lovely aromatics that range from dried herbs, tea and black cherry to coconut, vanilla and cocoa powder. The flavors are typical of cooler climate Cabernets including black currants, red licorice, earl grey tea and toasty oak. This medium-bodied wine closes with well rounded tannins and a long lasting finish.

Vinification

After a three-day cold soak, the grapes were crushed and fermented at relatively warm temperatures in stainless steel tanks. After pressing, each lot was blended or egg-white fined depending on flavor, color and tannin concentration. The wine was aged for 15 months, primarily in American oak. Small portions of Merlot and Syrah were added for balance, aromatics and flavor.
